Pumpkin Soup Recipe

It’s the Pumpkin Time of Year – I see orange! Pumpkins everywhere! It kicks in my desire for pumpkin soup.

When you carve your Jack-O-Lantern why don’t you make pumpkin soup as well? After you open top of the pumpkin and take out the “guts”- orange thing that hides pumpkin seeds (save them and make delicious snack), take some time to scrape insides of your pumpkin. Use just regular spoon or some other kitchen utensil to scrape sides. It is going to make carving your design easier (thinner sides – easier carving) and give you ingredient for tasty soup.

Now is cooking time! Warm some coconut oil to a medium temperature, add chopped onion, cover and simmer for about 5-6 minutes. Add garlic and pumpkin “meat”, cover and simmer until everything becomes soft, stirring occasionally so it does not stick to the bottom of your saucepan.

Now add some water, blend it to get smooth, creamy soup, add more water until you achieve desired thickness. Spice it up with salt, black pepper, turmeric, and ginger. Bring everything to boil, pour in heavy whip cream, sprinkle with chopped parsley and serve!
