How to Prepare Sweet Potatoes with Marshmallows

Thanksgiving celebration would not be right if you don’t prepare Sweet potatoes with marshmallows for your family and guests. I bring to you this recipe that is good for 8 to 10 servings.

Sweet Potatoes with Marshmallows - How to A to Z7lb/3kg sweet potatoes

5-6 tablespoons vegetable oil

1 tablespoon of lime juice

3 tablespoon of butter

½ tablespoon of salt

1 packet of mini marshmallows

Preheat the oven to 220C/425F.

Prick or puncture the sweet potatoes with fork and put them each onto a piece of aluminum foil large enough to wrap them in. Divide the oil between the foil sheets and then rub or turn the sweet potatoes in it and wrap into baggy but well sealed parcels. Put them on to a baking sheet or two and roast until the potatoes are soft and cooked through, approximately 1 – 1 ½ hours (depend on a size of potatoes). This way cooking the potatoes, apart from being very easy, means that you get maximum flavor so your Sweet potatoes with marshmallows dish is something to remember.

When the sweet potatoes are cool enough to handle, strip away the skin and fork or squeeze and pick the flesh into a large bowl. Pour in any syrupy juice from each of the foil peaces. Add all the other ingredients except for the marshmallows, and mix together to make the mash.

Spoon the sweet potato mash into an ovenproof dish. Smooth the top of the mash and cover with the mini marshmallows.

Bake in the hot oven for 10 – 15 minutes by which time the marshmallows will have colored on top and melted together, like a rippled, bronzed duvet. This Sweet potatoes with marshmallows dish is delicious addition to your table. Enjoy!
