  • 2.2 lb of watermelon rind
  • 2.2 lb of sugar
  • 1/2 cup of water
  • 1-2 lemons or lime

To prepare this watermelon rind preserve cut the watermelon in wedges. Remove pink flesh, leaving only about 0.1 inch of it. It will look decorative when cooked. Peel off green, outer layer from watermelon rind and cut it into small cubes.

Place those watermelon rind cubes into a pot and add water just to cover it nicely. Turn your burner on and bring to a boil, cook for 2-3 minutes, throw out that water and add the same amount of fresh water. Repeat this step 5-6 times until rind becomes tender.

After it’s cooked remove pieces of watermelon rind and let them drain.

Now it’s time to prepare the syrup. Put 2.2 lbs. of sugar into a pot and add 1/2 cup of water. Cook it on medium heat and stir. When the sugar has melted and the syrup becomes transparent add watermelon rind. Cook it on low temperature and stir occasionally.

When rind pieces become transparent (like a gummy bonbons) cut a lemon into round slices and add to preserve. Cook for 10 more minutes and remove from the stove.

If foam appears on the top during cooking, remove it before you remove the pot from the stove. Cover the pot with a wet kitchen towel and let it cool. Wet kitchen towel will prevent crust from forming on the top of your preserve.

After it has cooled, transfer preserve in jars and seal them tightly.
