When one layer is done transfer it to wax paper and put aside. You can put another wax paper and lay another layer on the top of the first one.
For the filing for Meringue torte you need:
- 12 egg yolks
- 200 g of white sugar
- 2 table spoon of flour
- 200 ml of milk
- 250 g of butter
- 50 g of white sugar
- 300 g of ground walnuts
- One quart of heavy whipping cream
- 1-2 tablespoon of powdered sugar
To prepare filing for Meringue torte, put all 12 egg yolks into a pan, add 200 g of sugar, flour, milk and cook on medium low temperature stirring all the time until it is creamy. It is a good idea to mix all the ingredients with mixer before heating. This way you will take care of crumbs. When cream is cooked put it aside and let it cool down completely.
Put 250 g of butter at room temperature and 50 g of sugar into mixing bowl and mix until it is creamed. Then add cold egg yolk cream into it, spoon by spoon, mixing all the time with electric mixer. At the end add 300 g of ground walnuts.
