To make cauliflower soup, break the cauliflower into small florets, wash, and cook in boiling salted water for about 8 minutes or until tender, over lower-medium heat to preserve nutrients. When cooked, drain immediately.

In the meantime, put oil into a saucepan and heat over low heat.  Peel and cut onion into chunks, add to the oil, cover, and sauté. Add peeled carrot, cut into chunks, add garlic and continue to sauté covered.

When vegetables are tender, add drained cauliflower, stir and cover for another 5 minutes.
